Not My Gumdrop Buttons

Who doesn't like making gingerbread men? It was definitely one of my favourite things to bake when I was younger and it still is. I absolutely love anything gingerbread, taste or smell, it just reminds me of Christmas!
So, if you want to have a go at baking Gingerbread Men, I have the perfect recipe for you.

- 350g plain flour
- 1 tsp bicarbonate of soda
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 125g butter
- 175g light soft brown sugar
- 1 medium egg
- 4 tbsp golden syrup

1. Sift together the flour, bicarbonate of soda, ginger and cinnamon then pour into a bowl or food processor. Add the butter and sugar and blend until the mixture resembles bread crumbs.
2. Lightly beat the egg and golden syrup together in a separate bowl. Add to the mixture until it is all combined.
3. Now it's time to make the mixture into a ball with your hands until it is smooth. Wrap it in clingfilm and leave to chill in the fridge for 15 minutes.
4. Preheat the oven to 180C/350F/Gas Mark 4. Line two baking trays with grease proof paper.
5. Roll the dough out on a lightly floured surface until it is about 1/2 inch in thickness. Using cutters, cut out the gingerbread men shapes and place them on the baking tray (make sure to leave a gap between them).
6. Bake for 12-15 minutes (or until lightly golden brown). Leave on the tray for 10 minutes and then move to a wire rack so they can cool. When fully cooled, you can decorate them being as creative as you like!
